Tom Halby Visits North Florida


Tom Halby toured Ocala, Gainesville and Jacksonville during the last week of April. Below are some trip highlights.

First Course:
Risotto cake with smoked salmon, cucumber, avocado and ginger oil, paired with Thomas Halby Wehlener Sonnenuhr Riesling Spatlese 2007
Second Course:
Organic greens tossed in olive oil with bleu cheese, raspberries and bacon finished with a port wine reduction. Paired with Thomas Halby Napa Valley Chardonnay 2007
Third Course:
Herbed lamb meat loaf with potato and leek gratin, asparagus and portabello  mushroom duxelle.
Paired with Thomas Halby Napa Valley Cabernet Sauvignon 2007
Fourth Course:
Dark chocolate and goat cheese cake with fresh blackberry and sour cream sauce.
